Neapolitan pizza is the original pizza. It's not a topping contest. It's three or four ingredients, done flawlessly — a thin, chewy crust with a soft puffy edge, bright tomato sauce, fresh mozzarella, olive oil, and fire.
The dough has to ferment slowly. The oven has to hit seven-fifty. The pie has to bake in about 120 seconds. The toppings have to be real.
Hold all those standards and you get a 120-year-old craft, made in Houston, served out of a wood-fired trailer. That's Vera.
